LAMB SHANK RECIPE
INGREDIENTS :
- 2 Lamb shank
- Oil
- 1 large Onion
- Half green pepper
- Half a cup baby carrots
- Half a cup butter beans
- 15ml aniseed
- 30ml ground cumin
- 30ml Paprika
- 30ml Cape Malay curry
- 15ml white pepper
- 5ml cloves
- 15ml soy sauce
- 30ml tomato paste
- Salt and pepper
- 4 cups of water
- Fresh parsley
METHOD :
- Fry onion and green pepper and add all spices
- Add lamb shank to the frying mixture and add tomato paste.
- Pour in water and soy sauce cover the pot and reduce the heat
- Season with salt and pepper then allow to simmer for 3-4 hours or until the lamb is tender.
- Add carrots checking on it every 30 minutes or so to ensure the meat hasn't dried out,add more water if necessary...
- Remove from heat and add butter beans.
- Garnish with fresh parsley
