Caramelized Baked Chicken

This most divine, heavenly recipe is one I found on Facebook and on Instgram, and I've made it a couple times and will make it again. It’s very easy and doesn’t require any marinating, though if you wanted to, I’m betting they’d be even more to-die-for. ;)

I only altered this recipe by adding in red pepper flakes to kick it up. Use whatever chicken parts you want; chicken wings are expensive and there’s not much meat on them. I can get chicken leg quarters for .69 per pound, and since we be po’ folk, I get those. I just cut them up myself to separate the legs and thighs, and they’re ready to go.

Ingredients 

For marinades:

  • 2 pounds chicken wings
  • 1 tablespoon brown sugar
  • 2 tablespoons fish sauce
  • Ground black pepper to taste


For the sauce:

  • ⅓ cup brown sugar
  • ½ cup of water
  • 2 tablespoons fish sauce
  • 2 tablespoons of rice vinegar
  • 3 cloves of minced garlic
  • 1 tablespoon ginger, grated
  • 2 hot thin red peppers, sliced
  • Oil for a frying pan


For decoration:

  • 2 tablespoons green onions, thinly sliced


Instructions 

  1. In a bowl, mix the chicken wings with the seasoning ingredients. Covering also allow it steep about at least 21 min . Drying wings with paper towels .
  2. Heat a big frying pan on medium heat and sprinkle it with some oil. Once it gets hot, add the wings and sauté on both sides. And take it from the pan & set apart .
  3. In same saucepan, add brown sugar and 2 large spoon of water. Stir the blending until sugar melted & bubbles begin to appear . Join residue of sauce ingredients & blend well.
  4. Return chicken wings to the pan, then minimize heat and leave the blending on a low heat, then covering the pan and leave it on the stove for 10 minutes.
  5. Remove the lid and cook for another 11 min , stirring occasionally. Remove the skillet from the heat when the sauce thickens and the chicken wings are fully cooked.
  6. Garnish the face with sliced ​​green onions.
