LOADED CAJUN SHRIMP POTATO

INGREDIENTS
- 1/4 Diced Red Pepper
- 1/2 Diced Andouille Sausage
- Green Onions
- 6 Medium Shrimp
- 1 Unsalted Butter
- 2 Teaspoon Blackened Scrumptious Or Favorite Blackening Creole/Cajun Seasoning.
- Parsley.
- 1 Sea Salt.
- 1 Cup Half N Half
- 1/4 Cup Chicken Broth
- 1 Teaspoon Flour
- 1/4 Cup Cheddar/Monterey Jack Cheese
- Pure Olive Oil.
- 2 Yukon Gold Potatoes
- Black Pepper
INSTRUCTIONS
- Preheat Oven To 425
- Coat Potatoes With Light Olive Oil, Season With Blackened Scrumptious Or Favorite Creole/Cajun Seasoning, Sea Salt.
- Use Cast Iron Skillet, Brown Potatoes On All Sides To Your Liking.
- Wrap Potatoes In Foil, Bake For 1 Hour Or Until Soft.
- Season Shrimp And Peppers With Blackened Scrumptious Seasoning Or Your Favorite Blackening/Cajun Seasoning, Sea Salt & Pepper To Taste.
- Brown Andouille Sausage, Use Same Skillet To Cook Shrimp For 2-3 Minutes On Each Side, Cook Peppers Until Slightly Soft Or To Your Liking. Set Aside.
- Add Half N Half, Broth, And Cheese To Separate Sauce Pan, Stir On Medium Heat Until Cheese Is Melted. Use Strainer To Remove Any Lumps From The Cheese Sauce. Set Aside In A Bowl.
- Melt Unsalted Butter, Then Add Flour To Sauce Pan, Stir On Low-Med Heat To Create A Roux.
- Add The Cheese Sauce To The Roux, Stir Until You Get A Creamy Smooth Consistency.
- Slice Open Potatoes, Add Unsalted Butter.
- Add Some Of The Shrimp, Sausage, Pepper Mixture On The Potatoes.
- Add Some Cajun Cheese Sauce On Potatoes.
- Add More Shrimp, Sausage, Peppers.
- (Optional) Add Additional Seasoning To Taste.
- Garnish With Green Peppers And Parsley.
