HEALTHY CHICKEN FAJITA CASSEROLE – A CHEESY, FLAVORFUL AND NUTRITIOUS MEAL!
Fajita chicken casserole is the perfect solution for those busy weekdays when you crave something delicious, quick, and bursting with flavor.
When it comes to Mexican cuisine, it’s all about the bold and vibrant flavors. What I adore about these dishes is their simplicity and the way they effortlessly bring together incredible flavors. Plus, most of them can be prepared in just a single pan! That means less time in the kitchen and more time enjoying a fantastic meal.
INGREDIENTS
- 1 tablespoon olive oil
- 6 4 to 6 ounces each boneless skinless chicken thighs, or breasts cut into 1″ to 2″ pieces (680-907 g)
- 4 bell peppers sliced (vary the colors to make it pretty!) (580 g)
- 1 small onion sliced (110 g)
- 1 recipe Taco Seasoning Mix or our Fajita Seasoning
- 1 cup sour cream 240 g
- 4 ounces of cream cheese softened (113 g)
- 2 cups cheddar cheese grated (226 g)
Optional: garnish with avocado or guacamole sour cream, salsa. For spicy lovers add heat with hot sauce.
INSTRUCTIONS
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, saute the chicken in olive oil until the chicken is cooked through. Remove from the skillet and set aside.
- Add the onions and peppers to the same skillet and saute until they become tender.
- Add the cooked chicken back to the skillet and stir in the taco seasoning, sour cream, and softened cream cheese. Mix well.
- Transfer the mixture to a casserole dish and sprinkle with grated cheddar cheese.
- Bake in the preheated oven for 20 minutes or until the cheese is bubbly.
- Remove from the oven and serve hot, garnished with avocado or guacamole, sour cream, and salsa if desired.
