Ingredients:
For the Chicken Bites:
- 2 lbs chicken breast or thighs, cut into bite-sized pieces
- 4 cloves garlic, minced

- 2 tbsp olive oil

For the Parmesan Cream Sauce:
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
For the Cheesy Roasted Potatoes:
- 4 medium potatoes, cubed
- 2 tbsp olive oil
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 tbsp garlic powder
- 1 tbsp parsley
- Salt and pepper, to taste
Instructions:
Prepare the Chicken Bites:
- In a skillet, heat olive oil over medium-high heat. Add chicken bites, season with salt and pepper, and cook until golden and cooked through. Set aside.
Make the Garlic Butter Sauce:
- In the same skillet, melt butter. Add minced garlic and sauté until fragrant.
- Pour in heavy cream, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir and cook until the sauce thickens.
- Return the cooked chicken bites to the skillet, coating them in the sauce. Garnish with parsley.
Roast the Potatoes:
- Preheat oven to 400°F (200°C). In a mixing bowl, toss cubed potatoes with olive oil, garlic powder, parsley, salt, and pepper.
- Spread potatoes on a baking sheet and bake for 20-25 minutes, or until tender.
