Mouthwatering Lemon Bar Cookie Cups 

Mouthwatering Lemon Bar Cookie Cups are a favorite of mine, so turning them into a cookie cup has been so much fun! There is something so wonderful about cookies baked in a mini muffin pan. A two bite cookie that you can fill with whatever you want totally rocks. It makes them so versatile. These Lemon Bar Cookie Cups are a perfectly baked sugar cookie cup that is filled with a super quick homemade lemon filling. You are going to want to grab the recipe and make them for yourself.

Ingredients

For the Cookie Cups:

  • 1 ½ cups all-purpose flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ⅓ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract


For the Lemon Filling:

  • 2 large eggs
  • ¾ cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 2 teaspoons lemon zest
  • ¼ cup freshly squeezed lemon juice
  • ½ teaspoon baking powder
  • Powdered sugar, for dusting (optional)


Instructions

Prepare the Cookie Cups:

  1. Preheat your oven to 350°F (175°C). Grease or line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and beat until combined.
  4. Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.
  5. Press a spoonful of the dough into each muffin cup to form a cookie crust, pressing down in the center to create a little well for the lemon filling.


Make the Lemon Filling:

  1. In a separate bowl, whisk together the eggs, sugar, flour, lemon zest, lemon juice, and baking powder until smooth and well combined.
  2. Carefully spoon the lemon mixture into the cookie cups, filling them almost to the top.


Bake the Lemon Bar Cookie Cups:

  1. Bake for 18-20 minutes, or until the lemon filling is set and the edges of the cookie cups are lightly golden.
  2. Let the cookie cups cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely.


Garnish and Serve:

  1. Once cooled, dust the tops of the lemon bar cookie cups with powdered sugar for a finishing touch, if desired.
