Ingredients
For the Cookie Cups:
- 1 ½ cups all-purpose flour
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ⅓ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
For the Lemon Filling:
- 2 large eggs
- ¾ cup granulated sugar
- 1 tablespoon all-purpose flour
- 2 teaspoons lemon zest
- ¼ cup freshly squeezed lemon juice
- ½ teaspoon baking powder
- Powdered sugar, for dusting (optional)
Instructions
Prepare the Cookie Cups:
- Preheat your oven to 350°F (175°C). Grease or line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and beat until combined.
- Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.
- Press a spoonful of the dough into each muffin cup to form a cookie crust, pressing down in the center to create a little well for the lemon filling.
Make the Lemon Filling:
- In a separate bowl, whisk together the eggs, sugar, flour, lemon zest, lemon juice, and baking powder until smooth and well combined.
- Carefully spoon the lemon mixture into the cookie cups, filling them almost to the top.
