Southern Fried Salmon Patties

Ingredients:
- 2 cans (14 oz each) salmon, drained and flaked
- 1 small onion, finely diced
- 2 large eggs
- 1/2 cup breadcrumbs or crushed crackers
- 1/4 cup milk
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 2 tbsp vegetable oil, for frying
Instructions:
- In a large mixing bowl, combine the flaked salmon, diced onion, eggs, breadcrumbs, and milk.
- Add garlic powder, paprika, salt, and pepper. Stir until well combined.
- Form the mixture into evenly sized patties, about 2-3 inches in diameter.
- Heat vegetable oil in a large skillet over medium heat until shimmering.
- Place the patties in the skillet and cook for 3-4 minutes per side, or until golden brown and heated through.
- Remove from the skillet and drain on a paper towel-lined plate. Serve warm with your favorite dipping sauce or a side of greens.
