crushed pineapple, and ripe bananas!!!

Hawaiian Banana Bread

Hawaiian Banana Bread with Pineapple, Coconut & Macadamia Nuts is a delicious Hawaiian-inspired banana bread made with Dole crushed pineapple, coconut flakes, and chopped macadamia nuts.


Ingredients:

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 very ripe banana, mashed
  • 1 cup crushed pineapple (do not drain)
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup shredded coconut

Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a large bowl, cream together the butter and sugar using an electric mixer until the mixture is light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the mashed banana and crushed pineapple until well combined.
  5. In a medium bowl, sift together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Gently fold in the shredded coconut.
  8. Pour the batter into a greased 9×5 inch loaf pan.
  9. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
