Hawaiian Banana Bread
Hawaiian Banana Bread with Pineapple, Coconut & Macadamia Nuts is a delicious Hawaiian-inspired banana bread made with Dole crushed pineapple, coconut flakes, and chopped macadamia nuts.
Ingredients:
- 1/2 cup butter, softened
- 1 cup sugar
- 2 large eggs
- 1 very ripe banana, mashed
- 1 cup crushed pineapple (do not drain)
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup shredded coconut
Instructions:
- Preheat your oven to 350 degrees Fahrenheit.
- In a large bowl, cream together the butter and sugar using an electric mixer until the mixture is light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the mashed banana and crushed pineapple until well combined.
- In a medium bowl, sift together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the shredded coconut.
- Pour the batter into a greased 9×5 inch loaf pan.
- Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
