Rich, hearty and full of flavor, Louisiana Dirty Rice is one of those delectably versatile comfort food recipes you’ll use all the time. A true Southern recipe filled with sausage, ground beef, bell pepper, onion, celery & spices, dirty rice is richly savory, completely comforting and can show up on any table from a Tuesday to the holidays! 

Ingredients:

  • 1 lb ground beef or pork (or a mix)
  • 1/2 lb chicken livers, finely chopped (optional, for authentic flavor)
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp vegetable oil or butter
  • 1/4 cup chopped green onions (for garnish)

Instructions:

  1. Heat oil in a large skillet over medium heat. Add the ground meat and chicken livers (if using). Cook until browned, breaking it into small pieces as it cooks.
  2. Stir in the onion, bell pepper, celery, and garlic. Cook until the vegetables are tender, about 5-7 minutes.
  3. Sprinkle in the Cajun seasoning, smoked paprika, thyme, salt, and pepper. Stir well to combine.
  4. Add the cooked rice to the skillet. Stir until the rice is fully coated with the flavorful meat and vegetable mixture. Cook for an additional 5 minutes, allowing the flavors to meld.
  5. Remove from heat, sprinkle with green onions, and serve warm as a main dish or a hearty side!
