Crockpot Cheese Tortellini and Sausage

Ingredients:
- 1 lb (500g) cheese tortellini (fresh or frozen)
- 10 oz (300g) Italian sausage (or substitute with chicken or beef sausage), sliced
- 3 cups chicken broth
- 1 can (14 oz/400g) diced tomatoes
- 1 ½ cups marinara sauce
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 cup fresh spinach
- 1 tsp garlic powder
- 1 tsp dried basil
- ½ tsp dried oregano
- Salt and pepper to taste
Instructions:
- Prepare the Crockpot: Add the sliced sausage to the crockpot. For extra flavor, sauté it in a pan before adding.
- Add Liquids: Pour in the chicken broth, diced tomatoes, and marinara sauce. Stir well.
- Slow Cook: Cover and cook on low for 4-5 hours or high for 2-3 hours until the flavors meld together.
- Add Tortellini & Cream: Stir in the cheese tortellini and heavy cream, then cook for another 20-30 minutes until the pasta is tender.
- Add Spinach & Cheese: Mix in the fresh spinach and Parmesan cheese. Stir until the spinach wilts. Taste and adjust seasoning with salt and pepper.
- Serve Warm: Garnish with extra Parmesan cheese and serve with crusty bread if desired.
Tips:
Use spicy sausage for a bolder flavor.
Add mushrooms or bell peppers for extra texture.
