Shrimp Scampi Pasta Bake

Ingredients:
Pasta:
- 12 oz linguine or penne
- 1 tbsp salt (for boiling water)
Shrimp Scampi:
- 1 lb large shrimp (peeled and deveined)
- 3 tbsp unsalted butter
- 3 tbsp olive oil
- 4 cloves garlic (minced)
- ½ tsp red pepper flakes (optional)
- ½ cup white wine or chicken broth
- Juice of 1 lemon
- ½ cup fresh parsley (chopped)
- Salt and pepper to taste
Cheese Topping:
- 1 cup shredded mozzarella
- ½ cup grated Parmesan
- ¼ cup breadcrumbs (optional for extra crispiness)
Instructions:
Cook the Pasta:
Boil the pasta in salted water until al dente, then drain and set aside.
Make the Shrimp Scampi Sauce:
- In a skillet over medium heat, melt butter and add olive oil.
- Sauté garlic and red pepper flakes for 28 seconds.
- Add shrimp and cook for about 2–3 minutes per side until pink.
- Pour in white wine and lemon juice, allowing it to simmer for 2 minutes.
- Season with salt, pepper, and parsley, then remove from heat.
Assemble & Bake:
- Preheat oven to 375°F (190°C).
- Toss cooked pasta with the shrimp scampi sauce and transfer to a greased 9×13-inch baking dish.
- Sprinkle mozzarella, Parmesan, and breadcrumbs evenly on top.
- Bake uncovered for 16–21 minutes, or until the cheese is melted and golden.
