Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cups diced potatoes (or frozen hash browns)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup frozen corn
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper


Instructions:

  1. In a skillet, cook the ground beef and onion over medium heat until browned. Drain excess grease.
  2. In a slow cooker, layer the potatoes, cooked beef, beans, corn, and diced tomatoes.
  3. In a bowl, mix the cream of mushroom soup with garlic powder, chili powder, salt, and pepper. Pour over the layers in the slow cooker.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until potatoes are tender.
  5. Sprinkle cheddar cheese on top, cover, and cook for another 10-15 minutes until melted.
